Tenderloin

Tenderloin; cuts of pork

Aptly named, the tenderloin is one of the most tender cuts of pork. It can be marinated for a few hours (up to 12) in the refrigerator. The tenderloin should not be cooked for too long or at too high a heat or it will get dry.

Grill or barbecue: For a tenderloin of 1 to 1½ pounds, grill on medium heat for 20 to 30 minutes, turning once halfway through.

Roast: For 1 to 1½ pounds, roast at 425 degrees for 20 to 30 minutes.
