Almond Broccolini

Jazz up garden-fresh broccolini with amaretto and sliced almonds in this easy, quick and healthy recipe.

Ingredients

  • 2 tablespoons almonds, sliced
  • 1 bunch (6-7 ounces) fresh broccolini
  • 1-2 tablespoons butter
  • 1-2 tablespoons amaretto or almond extract
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, toast the almonds for 3 to 4 minutes, until lightly browned. Remove the almonds from the skillet and set aside to cool.
  2. Trim ends of broccolini, then steam until fork-tender, approximately 4 to 5 minutes. Set aside.
  3. In the skillet, combine the butter, amaretto or almond extract, salt and pepper and cook over medium heat until the butter is melted. Add the broccolini and gently toss to coat with the amaretto-butter mixture.
  4. Transfer broccolini to a serving dish and garnish with toasted almonds. Serve immediately.
