Apricot Jam
Fresh apricots, lemon juice and sugar are all it takes for homemade Apricot Jam.

Ingredients
- 2 quarts apricots, peeled and crushed
- ¼ cup lemon juice
- 6 cups sugar
Instructions
- Sterilize canning jars, and prepare two-piece canning lids according to manufacturer’s instructions.
- Combine all ingredients in a large pot and slowly bring to a boil, stirring occasionally until sugar dissolves. Cook rapidly until thick, about 25 minutes. As mixture thickens, stir frequently to prevent sticking.
- Remove from heat and fill hot jam into hot, sterile jars, leaving ¼-inch headspace. Wipe rims of jars with a dampened clean paper towel; adjust two-piece metal canning lids.
- Process in a boiling water canner, following manufacturer’s instructions. The recommended process time for apricot jam is about 5 minutes for half-pints or pints.

Be prepared to be eating a LOT of great chocolate. This was the easiest recipe to make.
where do you find the white and dark chocolate almond bark? Is almond bark the candy coating? please help, i really want to make this Thanks

You can find the almond bark in the baking aisle of your local grocery store, located around the baking chocolate. Walmart carries a couple of varieties (http://www.walmart.com/search/search-ng.do?search_query=almond+bark). You can substitute the white chocolate almond bark for vanilla almond bark (or more chocolate) if you can’t find the other. Hope this helps!

OMG I MADE THIS NEW YEARS DAY IT IS SO GOOD .I HAD SEEN IT IN THE FARM BUREAU MAGAZINE. I TOOK IT OUT AND SOME HOW LOST IT THANK YOU FOR HAVING IT ON-LINE .I ENDED UP WITH 250 PIECES NOT 75 THOUGH AND WENT EXACTLY BY THE RECIPE EXCEPY I ADDED SOME VANILLA , BUT IT ALL WAS GONE IN NO TIME.THANK YOU

Thanks for letting us know how much candy this recipe yields! We’ve amended that part of the recipe. I think it really depends on how large or small you make the clusters, and you can always half the recipe if you think it’s too much. However, it sounds like it didn’t go to waste – thanks for sharing!

Hi, I’m making the candy as we “type”. Just a quick question, do you drop the candy on wax paper then when cool put in the liners?

I just wanted to know if you dropped the candy mixture onto wax paper first, then put into the little liners or if you dropped it directly into the liners.

We spoon the chocolate-nut mixture directly into the mini muffin liners and let them harden there. Hope this helps!

Hi! I want to make these but can’t find white chocolate almond bark. Can I use just plain white chocolate?

Actually, you would need to use white chocolate candy coating – it’s usually labeled as almond bark. If you can only find the chocolate almond bark, you can just use that instead for an extra rich chocolatey flavor!

These sound and look amazing! I’m getting ready to start my holiday baking and anything I can do in the slow cooker will be awesome! Question…what size slow cooker do you use? I only have one and its a 7 qt. oval. Would I need to double the recipe? Like I need 90 large or 160 small pieces of candy sitting around! *LOL* Thanks for your help! 🙂
Hi Pam,
We used a 3-quart slow cooker, but I think it would be fine to use a larger slow cooker with this amount. The recipe we adapted this from actually does double the recipe, so I think it really just depends on your needs! Ours made about 48 mini-muffin-sized pieces, so if you need more than that, I’d suggest doubling it.

Hi… This was a huge hit at all the houses for Christmas.. My husbands aunt wanted to know if we could make this with dark chocolate? Is it possible and if so what would I use? I tried finding dark chocolate almond bark and couldn’t find it anywhere. Also if I wanted to cut the recipe in half should I do half the cooking time in half as well? Sorry new to cooking chocolate

Great! I think you could certainly use dark chocolate chips instead of regular, but I am not sure where to find dark chocolate almond bark. Sometimes it’s called candy coating, so you might check with your local grocery store to see if they have a dark version. The almond bark/candy coating is what instantly hardens, so it can’t be substituted with just regular dark chocolate.
For the cooking time, I would still let it cook for about 45 minutes on high without peeking on the front end, but then you might find that it’s melted within 30 minutes instead of an hour for the next step of the recipe.
