Avocado Chicken Salad

Ingredients
- 1 cup Florida avocado, smashed
- 1⁄4 cup mayonnaise
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt
- 1⁄2 teaspoon black pepper
- 3 cups cooked chicken, shredded
- 1⁄2 cup green onions, sliced
- 1⁄2 cup walnuts, chopped
- 3⁄4 cup celery, chopped
- 3⁄4 cup grapes, quartered
Instructions
- In a large bowl, combine the smashed avocado, mayonnaise, lemon juice, Dijon mustard, salt and pepper and whisk to combine.
- Add the cooked chicken, green onions, walnuts and celery and mix until everything is combined.
- Gently mix in the grapes. Serve immediately or store in an airtight container.
