Ingredients

  • 8 ounces (1 package) reduced-fat cream cheese, softened
  • 2 green onions (white parts only), minced
  • ¼ teaspoon chili powder
  • ⅛ teaspoon ground cumin
  • ¼ cup cheddar cheese, shredded
  • 12 slices uncured bacon
  • 6 large fresh jalapeño peppers, halved lengthwise and seeded

Instructions

  1. In a medium bowl, stir together the cream cheese, green onions, chili powder, cumin, and cheddar cheese until thoroughly combined. Fill each jalapeño half with the cream cheese mixture.
  2. Tightly wrap each filled jalapeño half with a bacon strip. Secure bacon with a toothpick and place on a large plate. Chill in the refrigerator for at least an hour or up to overnight. This will help prevent the cream cheese from melting too fast when grilled.
  3. Preheat grill to high. Place each stuffed jalapeño on the grill, cut-side down, and cook until the bacon begins to crisp, about 5 minutes. Gently flip each jalapeño and reduce heat to medium-low. Grill for an additional 10 minutes, or until the bacon is completely cooked and the cheese has melted.
  4. Remove jalapeños from the grill and allow to cool slightly. Transfer to a platter and serve immediately.

Tips & Notes

Use disposable gloves to remove jalapeño seeds to prevent the spicy oils from saturating your fingers.
