Baked Pumpkin Doughnuts

Fall wouldn’t be complete without a few decadent, pumpkin-flavored treats. Baked Pumpkin Doughnuts provide a healthier alternative to traditional fried doughnuts, and the combination of pumpkin puree, warm pumpkin pie spice and a sweet maple glaze offers plenty of cozy fall flavor.

Ingredients

  • ¾ cup whole-wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • ½ cup canned pumpkin puree
  • ½ cup maple syrup
  • 1 large egg
  • 1 ½ tablespoons neutral cooking oil (like avocado oil or canola oil)
  • 1 teaspoon vanilla extract

Maple Glaze:

  • 3 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees. Spray a doughnut pan with nonstick cooking spray. Set aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice and salt.
  3. In a separate bowl, mix together the pumpkin puree, maple syrup, egg, oil and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Spoon batter into the doughnut pan, filling each slot almost to the top.
  5. Bake for 10 to 14 minutes, or until a toothpick inserted in the center of one doughnut comes out clean. Turn the doughnuts out onto a wire rack and allow to cool completely.
  6. In a small saucepan, combine the maple syrup and butter. Cook over low heat, whisking occasionally, until butter is melted. Remove from heat and whisk in the powdered sugar.
  7. Return mixture to very low heat. Quickly dip each doughnut into the glaze, then transfer to the wire rack to allow glaze to harden before serving.

  1. Thank you for a delicious alternative for fried donuts. I substituted applesauce for the egg and actual avocado (blended with water to the consistency of oil). It was Fabulous!
