Banana Cream Pie Jar Parfaits

Pie you can eat with a spoon? Who knew? Make these Banana Cream Pie Jar Parfaits by layering yogurt, graham cracker crumbs, banana slices and whipped cream in clear cups or Mason jars.

Ingredients

  • ½ cup coconut flakes
  • 3 cups nonfat plain Greek yogurt, strained
  • 2 cups skim milk
  • 1 package (5 ounces) banana cream instant pudding mix
  • 2 cups graham cracker crumbs
  • 2 ripe bananas, thinly sliced
  • 1 cup whipped cream

Instructions

  1. Preheat oven to 350 degrees. Spread coconut flakes evenly onto a small baking sheet. Bake for 2 to 4 minutes until lightly browned and toasted. Cool until ready to use.
  2. In a large bowl, combine the yogurt, milk and pudding mix and whisk until creamy, about 2 minutes. Let pudding mixture sit for about 5 minutes to firm up.
  3. To assemble parfaits, add 2 tablespoons graham cracker crumbs to the bottom of each serving cup or jar. Next, add ¼ cup pudding mixture to each jar, then 3 to 4 slices of banana. Repeat layers.
  4. Refrigerate parfaits until ready to serve. Dollop each with whipped cream and toasted coconut before serving.

Tips & Notes

If you can’t find banana cream pudding mix, vanilla pudding mix also works for this recipe.
