BLT Lettuce Wraps

Made with bacon, cherry tomatoes and avocado wrapped inside butter lettuce leaves and topped with a creamy chive dressing, these tasty bundles make a perfect appetizer, snack or party food.

Ingredients

  • 1 pound thick-sliced bacon
  • ¼ cup mayonnaise
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large head butter lettuce
  • 1 cup cherry tomatoes, quartered
  • 1 avocado, peeled and cubed

Instructions

  1. Preheat oven to 375 degrees. Place the strips of bacon on a baking sheet. Bake for 25 to 30 minutes, or until crispy. Remove from oven and place the bacon on a paper towel-lined plate to remove excess grease.
  2. In a bowl, whisk together the mayonnaise, chives, lemon juice, garlic, salt and pepper. Set aside.
  3. To assemble the wraps, tear the lettuce leaves off the head and fill each with bacon, tomatoes and avocado. Top with the creamy chive mixture and serve immediately.
