Blueberry Crisp with Oat Streusel

Ingredients
- 8 cups blueberries
- 1 cup sugar
- Zest of 2 lemons
- ¼ cup lemon juice
- 2 tablespoons plus 2 teaspoons cornstarch
- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ cup (1 stick) cold butter, cubed
- ½ cup brown sugar
- ¼ cup sliced almonds
- ¾ teaspoon baking powder
- ¾ teaspoon ground cardamom
- ½ teaspoon salt
- Vanilla ice cream, for serving (optional)
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine the blueberries, sugar, lemon zest and juice, and cornstarch. Pour mixture into the bottom of a large cast-iron skillet and set aside.
- In a large bowl, use a hand mixer or stand mixer fitted with a paddle attachment to mix together the flour, oats, butter, brown sugar, almonds, baking powder, cardamom and salt until the butter is well incorporated, about 6 to 7 minutes.
- Spread the oat streusel mixture evenly over the blueberry mixture. Bake for 1 hour and 15 minutes, or until the streusel is evenly browned and the blueberry layer is thick and bubbly. Let crisp cool before serving. Serve with vanilla ice cream, if desired.
