Broccoli Tikki 

These tasty, pan-fried patties made with broccoli, potato and fresh herbs make a quick and delicious appetizer or side dish.

Ingredients

Patties:

  • 2 cups raw broccoli, chopped into small pieces
  • ½ onion, finely chopped
  • 1 cup mashed potatoes
  • 2 tablespoons flour
  • 2 tablespoons cornstarch
  • 1 egg
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • ½ teaspoon red chili flakes
  • 1 tablespoon fresh mint, chopped (optional)
  • 1 tablespoon fresh cilantro, chopped (optional)
  • Canola oil for frying

Toppings:

  • Plain Greek yogurt
  • Chutney

Instructions

  1. Combine all patty ingredients except the canola oil. Mix by hand until very well combined.
  2. Measure out about ¼ cup of the mixture at a time to form into patties. Heat oil (about 1 tablespoon per frying cycle) over medium heat in a frying pan.
  3. Fry four patties at a time until deep golden, about 1 to 3 minutes per side, turning once.
  4. Top with yogurt and a dollop of chutney and serve immediately
