Butter Bean Smash

Skip mashed potatoes and try this heart-healthy Butter Bean Smash that goes perfectly alongside chicken, pork chops or beef.

Ingredients

  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 45 ounces (3 cans) butter beans, rinsed and drained
  • ½ cup skim milk

Instructions

  1. Heat oil in a large saucepan over medium heat. Add garlic and cook for 1 minute.
  2. Add the butter beans and cook for 2 to 3 minutes, or until warmed through.
  3. Add the milk a little at a time while roughly smashing the mixture with a fork.
  4. Scoop and serve warm.
