Buttermilk Citrus Bundt Cake with Orange Glaze

Ingredients

Cake:

  • 1 cup unsalted butter, room temperature (plus more for greasing pan)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup low-fat buttermilk
  • Zest of 1 orange (about 2 tablespoons)
  • 1 tablespoon fresh orange juice
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour (plus more for dusting pan)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Extra orange zest, for garnish (optional)

Orange Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon whole milk
  • 2 tablespoons fresh orange juice

Instructions

  1. Preheat oven to 325 degrees. Generously grease a 10-inch Bundt pan using butter and a light dusting of flour (even for non-stick Bundt pans). Set aside.
  2. In a large bowl, use an electric mixer to cream together the butter and sugar until light and creamy, about 5 minutes. Add the eggs, one at a time, followed by the buttermilk, orange zest, orange juice and vanilla. Mix completely and set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  4. Gradually add the dry ingredients to the wet ingredients. Mix on medium speed until well combined. Do not over-mix.
  5. Pour the batter into the prepared Bundt pan. Bake for 1 hour, or until a toothpick or cake tester inserted into the center comes out clean.
  6. While the cake is baking, prepare the glaze. In a large measuring cup with a spout, combine the powdered sugar, butter, milk and orange juice. Whisk until combined and smooth.
  7. Remove cake from the oven and allow it to cool in the pan on a wire rack. Once cool, invert the cake onto a serving platter and pour the glaze over the top. Garnish with additional orange zest before serving, if desired.
