Cabbage Salad with Chicken and Thai Peanut Dressing

This Asian-inspired dish features a whopping 6 cups of vitamin-packed cabbage. Combined with chicken for protein and a delicious peanut dressing, this healthy salad will keep you full long after your meal.

Ingredients

Cabbage Salad:

  • 3 cups napa or green cabbage, thinly sliced
  • 3 cups red cabbage, thinly sliced
  • 1 cup (1 medium) cucumber, sliced
  • 1 large red bell pepper, sliced
  • ½ cup fresh cilantro, chopped
  • Sesame seeds, optional

Chicken:

  • 1 pound chicken breast
  • 1 teaspoon salt
  • 3 tablespoons olive oil

Thai Peanut Dressing:

  • ¾ cup creamy peanut butter
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 1 clove garlic, minced
  • ½ teaspoon fresh ginger, minced
  • 1 teaspoon Sriracha or red chili sauce
  • ¾ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 5-6 tablespoons warm water

Instructions

  1. In a large bowl, combine the green and red cabbage, cucumber, bell pepper and cilantro. Set aside.
  2. Slice the chicken into 2-inch cubes and toss with salt. In a large skillet over medium-high heat, add the oil. Once hot, add the chicken and cook for 2 to 3 minutes on each side. Remove the chicken from the skillet and set aside.
  3. In a blender or food processor, combine all dressing ingredients except water. Blend until smooth. Add warm water to thin the dressing to desired consistency.
  4. Add the chicken to the salad mixture and toss with desired amount of dressing. Top salad with sesame seeds, if desired, and serve immediately.
