Cabbage Stir-Fry

Fresh and simple, this cabbage stir-fry features portobello mushrooms, green peppers and green onions.

Ingredients

  • 2 cups cabbage, chopped (any type of cabbage can be used)
  • 1 cup baby portobello mushrooms
  • 1 cup green peppers
  • 1 bunch green onions
  • 1 tablespoon garlic
  • 2 tablespoons canola oil, divided

Instructions

  1. Remove core from cabbage and chop into 2-inch strips. Cut the mushrooms, green pepper and green onions (use green and white parts) into thin slices. Chop the garlic.
  2. Preheat 1 tablespoon oil in a large saute pan on medium for 2 to 3 minutes. Place cabbage in pan and cook for 5 to 7 minutes, tossing like a salad as it cooks.
  3. Add the remaining tablespoon of oil, and stir in the garlic, green pepper, green onions and mushrooms. Cook for 3 to 4 minutes or until mushrooms and cabbage are tender.
