Caramel Apple Cheesecake Bars

This decadent caramel apple cheesecake dessert makes the perfect treat for any tailgate party or game get-together.

Ingredients

For the Crust 

  • 14 graham crackers
  • 8 tablespoons unsalted butter, melted
  • ¼ cup brown sugar
  • ½ teaspoon ground cinnamon

For the Apple Pecan Topping

  • 2-3 apples, diced (about 2 cups)
  • ½ cup pecans, chopped
  • ½ teaspoon cinnamon
  • 2 tablespoons sugar

For the Cheesecake 

  • 24 ounces (3 packages) cream cheese, room temperature
  • ½ cup sour cream, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • Zest and juice of 1 lemon
  • ½ teaspoon kosher salt
  • 3 eggs, room temperature
  • 3-4 tablespoons caramel sauce

Instructions

  1. Preheat oven to 350 degrees and grease a 9-by-13-inch pan. Set aside.
  2. Place the graham crackers in a food processor or blender and pulse until you have crumbs. Pour into a large bowl along with the melted butter, brown sugar and cinnamon, and mix until combined.
  3. Pour the crust into the pan. Using your hand, press the mixture into the pan. Bake for 8 to 10 minutes or until slightly browned.
  4. While the crust is cooking, peel and dice the apples, and add them to a bowl along with the pecans, cinnamon and sugar. Mix and then set aside.
  5. Add the cream cheese, sour cream and sugar to a large bowl, and use a hand or stand mixer to beat the mixture until light and fluffy.
  6. Add the vanilla, lemon zest and juice, and salt and continue to mix. Scrape the sides of the bowl periodically
  7. Lastly, add the eggs one at a time and mix until just combined. Don’t overmix.
  8. Pour the cheesecake mixture over the crust and top with the apple pecan mixture. Bake for 30 to 35 minutes or until the edges are starting to set but the middle is still a little soft.
  9. Let the cheesecake cool on the counter until it reaches room temperature, and then chill in the refrigerator overnight or for at least 6 to 8 hours.
  10. Slice into bars and top with caramel sauce. Serve immediately or store in the refrigerator.
