Chickpea and Tomato Salad with Garlic Dressing and Sourdough Croutons
Tomatoes are a staple in any fresh summer salad. Instead of lettuce, use crunchy cucumbers and protein-rich chickpeas as the base of our Chickpea and Tomato Salad with Garlic Dressing and Sourdough Croutons. The creamy dressing and homemade croutons add a special touch to this satisfying salad.

Ingredients
Sourdough Croutons:
- 4 tablespoons butter, melted
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 8 thick slices sourdough bread, cut into large cubes
Garlic Dressing:
- 4 cloves garlic, pressed or minced
- ⅓ cup olive oil
- ¼ cup balsamic vinegar
- ¼ cup mayonnaise
- 1 tablespoon honey
- ½ teaspoon salt
- ⅛ teaspoon black pepper
Chickpea Salad:
- 2-3 medium tomatoes, chopped
- 3 medium cucumbers, peeled, seeded and chopped
- 3 green onions, thinly sliced
- 15 ounces (1 can) chickpeas, drained
Instructions
- For the croutons: Preheat oven to 350 degrees. In a medium bowl, combine all crouton ingredients except bread cubes and stir well. Spread bread out evenly onto a baking sheet. Drizzle with butter mixture and toss to coat. Bake for 20 minutes, tossing halfway through cooking. Turn off oven and allow croutons to dry out in the cooling oven for about 1 hour.
- For the dressing: In a jar with a lid, combine all dressing ingredients. Close jar and shake well until creamy and combined. Set aside.
- For the salad: In a large bowl, combine all salad ingredients. Toss to combine. Pour the dressing over the salad. Add 2 heaping cups of croutons and toss until everything is combined. Serve with additional croutons as desired.
