Ingredients
Coconut Rice:
- 28 ounces (2 cans) coconut milk
- 1 ½ teaspoons salt
- 2 cups basmati rice
Salmon:
- 4 salmon fillets (5 to 7 ounces each)
- 2 tablespoons olive oil
- 2 teaspoons salt (optional)
- ¾ teaspoon black pepper
- ¼ cup green onions, chopped
Citrus Glaze:
- ½ cup orange juice
- 2 tablespoons sugar
- 4 teaspoons honey
- 4 teaspoons chili garlic sauce
- 2 teaspoons rice vinegar
- 2 teaspoons sesame oil
- 2 teaspoons orange zest
- ½ teaspoon fish sauce
- 2 teaspoons cornstarch
Instructions
- For the rice: In a medium pot, combine ½ cup water with coconut milk and salt. Bring to a boil over high heat, then reduce heat to low and add the rice. Stir to combine, then cover pot and cook on low for 20 minutes. Remove from heat and set aside to cool.
- For the salmon: Brush both sides of each salmon fillet with olive oil and season with salt and pepper. Allow fillets to come to room temperature for 20 minutes.
- Meanwhile, in a small bowl, combine all glaze ingredients except cornstarch. Whisk to combine and set aside.
- Preheat a large skillet over medium heat. Cook salmon fillets skin-side up for 4 to 5 minutes. Flip and continue cooking an additional 3 to 4 minutes, or until fish reaches desired doneness. Remove fillets from skillet and set aside.
- Reduce heat to medium-low. Whisk cornstarch into glaze mixture, then pour glaze into the skillet. Cook 1 to 2 minutes or until slightly thickened, then turn off heat and return salmon to the skillet to coat with glaze.
- Divide rice between 4 serving plates or bowls and top each serving with glazed salmon. Spoon extra glaze over the top, if desired. Garnish with green onions and serve immediately.
