Cranberry Scones with Orange Glaze

Ingredients

Scones:

  • 2 cups all-purpose flour
  • ⅓ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons butter, cold
  • ⅓ cup heavy whipping cream
  • 1 large egg, beaten
  • ½ cup fresh cranberries, coarsely chopped
  • ½ cup dried cranberries
  • 1 teaspoon orange zest

Glaze:

  • 1 ½ cups powdered sugar
  • 2 tablespoons butter, melted
  • 2 tablespoons milk
  • 1 teaspoon orange zest

Instructions

  1. Preheat oven to 400 degrees. Spray a baking sheet with nonstick cooking spray and set aside.
  2. In a large bowl, sift together the flour, sugar, baking powder and salt. Using a pastry blender or fork, cut the butter into the flour mixture until it resembles coarse crumbs. 
  3. Add cream and egg and gently fold into the mixture until well combined. Add fresh and dried cranberries and orange zest and stir until just combined. 
  4. On a floured surface, form dough into a 1-inch thick disc about 8 inches in diameter. Cut dough into 8 equal triangles and place on prepared baking sheet. Bake for 14 to 17 minutes. Allow scones to cool. 
  5. While scones are cooling, prepare the glaze by whisking all glaze ingredients together in a small bowl until smooth. 
  6. Spoon glaze over cooled scones before serving. Store leftover scones in an airtight container at room temperature for up to 5 days.

  2. I’d never even heard of a scone until about 30 years ago. But, it did not take me long to love them after being served one. I now have a collection of different flavored scone recipes. I make them, then freeze them so I can always have some ready when I just need one. I like the dense texture. I can make them taste like most anything, sweet or not, and I can add a bit of anything, nuts, fruit, even bits of meat. They have become a favorite of mine,
