Ingredients
- 1 ½ pounds baby potatoes
- 3 tablespoons extra-virgin olive oil, plus more if necessary
- 2 tablespoons fresh dill, chopped
- ½ teaspoon salt
Instructions
- Place potatoes in a large pot of water. Bring to a boil and allow to cook for 15 to 20 minutes, or until they fall off the fork when pierced. Drain the potatoes and allow to cool.
- Place the cooked and cooled potatoes on a cutting board and press the potato down flat using the palm of your hand, being careful to keep the potatoes from falling apart.
- Heat a large skillet over medium heat and coat the bottom of the pan with oil.
- Carefully place the potatoes into the hot oil, sprinkle with salt and cook for about 5 minutes on each side. Add more oil to the pan if needed (you want the bottom to stay coated).
- Sprinkle potatoes with dill and serve warm.
Tips & Notes
Step 1 can be done a day in advance to save time.
