Ingredients

  • 1 ½ pounds baby potatoes
  • 3 tablespoons extra-virgin olive oil, plus more if necessary
  • 2 tablespoons fresh dill, chopped
  • ½ teaspoon salt

Instructions

  1. Place potatoes in a large pot of water. Bring to a boil and allow to cook for 15 to 20 minutes, or until they fall off the fork when pierced. Drain the potatoes and allow to cool.
  2. Place the cooked and cooled potatoes on a cutting board and press the potato down flat using the palm of your hand, being careful to keep the potatoes from falling apart.
  3. Heat a large skillet over medium heat and coat the bottom of the pan with oil.
  4. Carefully place the potatoes into the hot oil, sprinkle with salt and cook for about 5 minutes on each side. Add more oil to the pan if needed (you want the bottom to stay coated).
  5. Sprinkle potatoes with dill and serve warm.
