Crostini with Strawberry Goat Cheese Spread

Crostini with Strawberry Goat Cheese Spread is perfect for springtime entertaining. Made with sweet strawberries, tangy goat cheese and fresh herbs spread onto slices of toasted baguette, this crowd-pleasing appetizer comes together in just minutes.

Ingredients

  • 1 baguette, sliced 
  • ¼ cup plus 1 tablespoon olive oil, divided
  • ¾ teaspoon salt, divided
  • 8 ounces (1 cup) goat cheese, room temperature
  • 4 ounces (½ cup) creme fraiche
  • ¼ cup honey
  • 2 tablespoons pecorino Romano, grated
  • 8 ounces strawberries, diced
  • 4 tablespoons assorted fresh herbs, chopped (basil, oregano, mint, tarragon, thyme)

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper. 
  2. Place baguette slices on baking sheet. Drizzle with ¼ cup olive oil on both sides and sprinkle with ¼ teaspoon salt. Bake for 8 to 10 minutes, or until slightly golden.
  3. In a medium bowl, use a hand mixer or spatula to combine goat cheese, creme fraiche, honey, pecorino Romano and ¼ teaspoon salt until mixture is light and creamy. Spoon mixture into a serving dish. Set aside.
  4. In a separate bowl, combine strawberries, herbs, remaining 1 tablespoon olive oil and ¼ teaspoon salt. Spoon mixture into the serving dish on top of the cheese mixture.
  5. Serve strawberry goat cheese spread on toasted baguette slices.
