Crunchy Slaw with Cashews and Orange Dressing
No spring picnic is complete without slaw. Crunchy Slaw with Cashews and Orange Dressing offers a fresh take on the classic recipe with a mixture of cabbage and bok choy, fresh oranges, and a tangy sesame-orange dressing.

Ingredients
- 4 cups shredded cabbage or 10 ounces (1 bag) pre-shredded
- 2 cups bok choy, chopped
- 3 green onions, trimmed and chopped
- 1 cup roasted, salted cashew pieces
- 3 ounces (1 package) chicken-flavored Ramen noodles, uncooked and broken into small pieces
- 2 oranges, peeled, pith and seeds removed, cut into bite-sized pieces
Orange Dressing:
- 1 tablespoon orange zest
- 2 tablespoons sesame oil
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 teaspoon Chinese five-spice powder (optional)
Instructions
- In a large bowl, combine cabbage, bok choy, green onions, cashews, Ramen noodles and oranges.
- In a medium bowl, whisk together all dressing ingredients and the seasoning packet from the Ramen noodles. Sweeten to taste with more honey, if desired.
- Pour dressing over slaw and toss until completely coated. Serve immediately.
