Crunchy Slaw with Cashews and Orange Dressing

No spring picnic is complete without slaw. Crunchy Slaw with Cashews and Orange Dressing offers a fresh take on the classic recipe with a mixture of cabbage and bok choy, fresh oranges, and a tangy sesame-orange dressing.

Ingredients

  • 4 cups shredded cabbage or 10 ounces (1 bag) pre-shredded
  • 2 cups bok choy, chopped
  • 3 green onions, trimmed and chopped
  • 1 cup roasted, salted cashew pieces
  • 3 ounces (1 package) chicken-flavored Ramen noodles, uncooked and broken into small pieces
  • 2 oranges, peeled, pith and seeds removed, cut into bite-sized pieces

Orange Dressing:

  • 1 tablespoon orange zest
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon Chinese five-spice powder (optional)

Instructions

  1. In a large bowl, combine cabbage, bok choy, green onions, cashews, Ramen noodles and oranges.
  2. In a medium bowl, whisk together all dressing ingredients and the seasoning packet from the Ramen noodles. Sweeten to taste with more honey, if desired.
  3. Pour dressing over slaw and toss until completely coated. Serve immediately.
