Ingredients
- Nonstick vegetable spray
- 1 tablespoon olive oil
- 1 cup baked ham, chopped
- 6 ounces (½ package) frozen chopped collard greens, thawed and drained
- 1 small onion, diced
- ⅛ teaspoon hot sauce (optional)
- 8 ounces (2 cups) cheddar cheese, shredded
- 1 cup 2% milk
- 2 large eggs
- ½ cup all-purpose baking mix (such as Bisquick Original Pancake & Baking Mix)
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 400 degrees and coat a 9-inch pie plate with nonstick vegetable spray. Set aside.
- In a large skillet, warm the olive oil over medium-high heat. Add the ham and saute for 5 minutes or until browned. Stir in the collards, onion and hot sauce (if using), and saute another 5 minutes, or until onion is tender and liquid evaporates.
- Transfer half the ham and collard mixture to the prepared pie plate and spread evenly over the bottom. Top with 1 cup shredded cheese. Repeat layers.
- In a medium bowl, whisk together the milk, eggs, baking mix and pepper until smooth. Pour mixture evenly into the pie plate over the top layer of cheddar.
- Bake for 30 minutes, or until a knife inserted into the center of the quiche comes out clean. Let quiche stand for 10 minutes before slicing and serving.

Not in the mood for collards? Spinach is an easy substitution.
