Fresh Strawberry Layer Cake

Ingredients
- 1 pint fresh strawberries
- 1 box white cake mix
- ½ cup butter, melted
- 2 eggs
Frosting:
- 1 cup butter, softened
- 3-4 cups powdered sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 2-4 tablespoons milk
- 1-2 drops red food coloring or beet juice, optional
Optional Garnishes:
- ½ cup strawberry preserves
- Fresh strawberries
Instructions
- Preheat oven to 350 degrees. Grease and flour two 8-inch round baking pans or four 6-inch pans.
- Puree strawberries until smooth. Beat together pureed berries, cake mix, butter and eggs until well combined and free of lumps. Divide evenly into baking pans and bake for 15 to 20 minutes, until centers spring to the touch or a tester comes out clean. Set aside to cool.
- While cakes are cooling, prepare frosting. In a mixer, beat butter until fluffy. Gradually add sugar, salt and vanilla until the texture is very smooth and easy to spread, but not too soft. Add milk 1 tablespoon at a time, beating in between. Add in food coloring or beet juice, if using, and beat until combined.
- Once the cakes are completely cool, frost layers, sides, then top. If desired, spread a thin layer of preserves between each layer to bump up the berry flavor. Garnish with fresh strawberries.
