Ingredients

  • 1 egg
  • 2 teaspoons hot sauce
  • 3 tablespoons buttermilk
  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 2 teaspoons salt, divided
  • 1 teaspoon ground paprika
  • ½ teaspoon black pepper
  • 6 catfish fillets
  • 4 cups canola oil
  • Homemade Hushpuppies (optional)

Instructions

  1. In a shallow dish, whisk together the egg, hot sauce and buttermilk.
  2. In a separate shallow dish, whisk together the cornmeal, flour, 1 teaspoon salt, paprika and pepper.
  3. Sprinkle catfish fillets with remaining 1 teaspoon salt. Dredge each fillet in egg mixture, then in cornmeal mixture. Place breaded catfish in a pan and chill for a minimum of 10 minutes in the refrigerator.
  4. Heat canola oil in a large, heavy-bottomed pot until it reaches 350 degrees.
  5. Fry catfish for about 6 to 8 minutes, or until crispy and browned. Remove fish from oil and place on a paper towel-lined plate to drain off excess oil. Serve warm alongside Homemade Hushpuppies, if desired.
