Ingredients
- 1 egg
- 2 teaspoons hot sauce
- 3 tablespoons buttermilk
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 2 teaspoons salt, divided
- 1 teaspoon ground paprika
- ½ teaspoon black pepper
- 6 catfish fillets
- 4 cups canola oil
- Homemade Hushpuppies (optional)
Instructions
- In a shallow dish, whisk together the egg, hot sauce and buttermilk.
- In a separate shallow dish, whisk together the cornmeal, flour, 1 teaspoon salt, paprika and pepper.
- Sprinkle catfish fillets with remaining 1 teaspoon salt. Dredge each fillet in egg mixture, then in cornmeal mixture. Place breaded catfish in a pan and chill for a minimum of 10 minutes in the refrigerator.
- Heat canola oil in a large, heavy-bottomed pot until it reaches 350 degrees.
- Fry catfish for about 6 to 8 minutes, or until crispy and browned. Remove fish from oil and place on a paper towel-lined plate to drain off excess oil. Serve warm alongside Homemade Hushpuppies, if desired.
