Grilled Shrimp Tacos

Ingredients
Grilled Shrimp:
- ¼ cup olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 tablespoons fresh parsley, chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound shrimp, peeled and deveined
Sauce:
- ½ cup plain Greek yogurt
- ½ cup mayonnaise
- Juice of 1 lime
- 1 jalapeño, seeded and diced (optional)
- ½ teaspoon cumin
- ½ teaspoon coriander
- ½ teaspoon dried dill
- ½ teaspoon dried oregano
- ¼ teaspoon cayenne pepper
- 1 pinch salt
Tacos:
- Corn tortillas
- Shredded cabbage
- Sliced avocados
- Diced tomatoes
- Fresh or pickled jalapeño slices (optional)
Instructions
- For the shrimp: In a large bowl, whisk together the oil, lemon juice, garlic, tomato paste, parsley, salt and pepper. Add the shrimp and toss to coat. Allow shrimp to marinate for about 20 minutes.
- For the sauce: While shrimp marinate, whisk together all sauce ingredients in a small bowl. Set aside.
- Preheat grill to medium heat. Thread the shrimp on skewers and cook for about 2 to 3 minutes per side, or until shrimp are pink and reach an internal temperature of 145 degrees. (See note for oven instructions.)
- To assemble: Top each tortilla with grilled shrimp, shredded cabbage, sliced avocado, diced tomatoes, jalapeño slices (if using) and a dollop of sauce. Serve immediately.
Tips & Notes
No grill? You can also cook the shrimp in the oven. Preheat the oven to broil, line a baking sheet with aluminum foil and spread the marinated shrimp in a single layer on the baking sheet. Broil for 2 to 3 minutes, or until shrimp are pink and reach an internal temperature of 145 degrees.
