Grilled Shrimp Tacos

Looking for a family-friendly dinner you can throw together in 30 minutes? Grilled Shrimp Tacos are the answer. After preparing the quick and easy grilled shrimp, serve them on warm corn tortillas with your favorite toppings and a dollop of creamy homemade sauce.

Ingredients

Grilled Shrimp:

  • ¼ cup olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons fresh parsley, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound shrimp, peeled and deveined

Sauce:

  • ½ cup plain Greek yogurt
  • ½ cup mayonnaise
  • Juice of 1 lime
  • 1 jalapeño, seeded and diced (optional)
  • ½ teaspoon cumin
  • ½ teaspoon coriander
  • ½ teaspoon dried dill
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • 1 pinch salt

Tacos:

  • Corn tortillas
  • Shredded cabbage
  • Sliced avocados
  • Diced tomatoes
  • Fresh or pickled jalapeño slices (optional)

Instructions

  1. For the shrimp: In a large bowl, whisk together the oil, lemon juice, garlic, tomato paste, parsley, salt and pepper. Add the shrimp and toss to coat. Allow shrimp to marinate for about 20 minutes. 
  2. For the sauce: While shrimp marinate, whisk together all sauce ingredients in a small bowl. Set aside.
  3. Preheat grill to medium heat. Thread the shrimp on skewers and cook for about 2 to 3 minutes per side, or until shrimp are pink and reach an internal temperature of 145 degrees. (See note for oven instructions.)
  4. To assemble: Top each tortilla with grilled shrimp, shredded cabbage, sliced avocado, diced tomatoes, jalapeño slices (if using) and a dollop of sauce. Serve immediately.

Tips & Notes

No grill? You can also cook the shrimp in the oven. Preheat the oven to broil, line a baking sheet with aluminum foil and spread the marinated shrimp in a single layer on the baking sheet. Broil for 2 to 3 minutes, or until shrimp are pink and reach an internal temperature of 145 degrees.
