Holiday Monster Cookies

Holiday Monster Cookies include all the best Christmas cookie ingredients in one, from peanut butter and chocolate chips to oats, nuts, and red and green M&M’s. Made in just one bowl, the recipe is easily adaptable for just about any mix-ins you prefer.

Ingredients

  • 1 cup (2 sticks) salted butter, room temperature
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 ½ cups peanut butter
  • 2 eggs, room temperature
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup quick oats
  • ¾ cup holiday (red and green) M&M’s
  • ¾ cup dark chocolate chips
  • ½ cup salted pistachios, roughly chopped

Instructions

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper or a silicone baking mat and set aside.
  2. In a large bowl, use a hand or stand mixer fitted with the paddle attachment to cream together the butter and both sugars on medium speed until light and fluffy, about 2 to 3 minutes, scraping down the sides as needed. 
  3. Add the peanut butter, eggs and vanilla and mix to combine. Add the flour, baking soda and baking powder and mix until just combined. On low speed, mix in the oats, M&M’s, chocolate chips and pistachios until just incorporated.
  4. Scoop dough into balls about 1 to 2 tablespoons in size and place on the prepared baking sheets. Press a few extra M&Ms into the top of the dough balls. Bake cookies in batches 1 baking sheet at a time for 11 to 13 minutes per batch or until slightly golden around the edges.
  5. Remove from oven and press cookies down using the back of a spoon to flatten. Allow the cookies to cool for about 10 minutes on the baking sheet before transferring to a wire rack to cool completely before serving.
