Ingredients
- ¼ cup milk
- 2 large eggs, beaten
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 3 cups apples, peeled and diced into ½-inch pieces
- 6 cups vegetable oil, for frying
- 2 cups powdered sugar
Instructions
- In a small bowl, whisk together the milk, eggs, granulated sugar, vanilla and lemon juice. In a large bowl, sift together the flour, baking powder, cinnamon and salt.
- Add the wet ingredients to the dry ingredients and stir until just combined. Stir in the apples.
- In a large, heavy-bottomed pot, heat the oil over medium-high heat. Use a candy thermometer to monitor temperature. When oil reaches 350 degrees, carefully drop about ¼ cup of fritter batter into the hot oil and fry until golden brown, about 3 minutes on each side. Use a slotted spoon to transfer fritter to a paper towel-lined plate. Continue batch frying the remaining batter 2 to 3 fritters at a time.
- In a small bowl, whisk the powdered sugar with 1 to 2 tablespoons warm water to make a glaze. Drizzle glaze evenly over the fritters and serve warm.
