Lemon Raspberry Cupcakes

Ingredients
- 3 eggs
- 1 lemon, zested and juiced
- 1 cup sugar
- ½ cup extra-virgin olive oil
- ½ cup yogurt
- 1 ½ cup all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
- 6 ounces raspberries
Frosting:
- 8 ounces (1 package) cream cheese, room temperature
- ¼ cup (½ stick) butter, room temperature
- 3 cups powdered sugar
- Zest of 1 lemon
- ¼ teaspoon salt
Garnishes:
- Zest of 1 lemon
- 14 raspberries
Instructions
- Preheat oven to 350 degrees and line a cupcake pan with paper liners. Set aside.
- In a large bowl, use a hand or stand mixer fitted with the paddle attachment to mix together the eggs, lemon zest and sugar on medium speed until light and fluffy, about 3 to 4 minutes.
- With mixer running, slowly stream in the lemon juice and oil. Stop mixer and add the yogurt, flour, baking powder and salt. Mix again on low speed until completely combined and smooth, about 1 minute. Using a spatula, fold in the raspberries.
- Scoop batter into cupcake liners, filling each about ¾ of the way to the top. Bake for about 23 minutes, or until lightly golden on top. Set aside to cool completely.
- Meanwhile, prepare the frosting. In a large bowl, use a hand or stand mixer fitted with the paddle attachment to beat together the cream cheese and butter until light and fluffy, about 5 minutes. Add powdered sugar 1 cup at a time, mixing slowly after each addition until combined. Add lemon zest and salt and mix again to incorporate.
- Spoon frosting into a piping bag fitted with a star tip. Pipe onto cooled cupcakes. Garnish each cupcake with additional lemon zest and 1 raspberry before serving.
