Lightened-Up Stuffed Cabbage Rolls

A traditional dish, this version of cabbage rolls is a bit healthier than the original.

Ingredients

  • 1 medium head of cabbage
  • 1 pound ground turkey (from white meat)
  • ¾ cup long-grain rice, uncooked
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • salt and pepper, to taste
  • 16 ounces crushed tomatoes
  • ¼ cup water
  • 3 tablespoons lemon juice
  • 2 tablespoons brown sugar

Instructions

  1. Core cabbage and separate all leaves. Put in pan of hot water to wilt. Set aside.
  2. Mix ground turkey, rice, onion, garlic, salt and pepper.
  3. When cabbage leaves are wilted, remove hard stems. Place about 2 teaspoons of meat and rice mixture in cabbage leaf and roll tightly. Place in pot or baking dish, seam side down.
  4. In a medium bowl, mix together tomatoes, water, lemon juice and brown sugar. Pour the sauce over the cabbage rolls.
  5. Cook rolls by simmering on top of stove, covered for 3 to 4 hours. Alternately, bake them in a 350-degree oven for 3 hours.
