Maple Roasted Carrots

Ingredients
- 2 pounds carrots
- ¼ cup brown sugar
- ¼ cup maple syrup
- 1 teaspoon sea salt
- 4 tablespoons unsalted butter, cubed
Optional Garnishes:
- 2 tablespoons almonds, sliced
- 1 tablespoon parsley, chopped
Instructions
- Preheat oven to 400 degrees and line a 9-by-13-inch baking dish with aluminum foil.
- Peel the carrots and slice them in half using a diagonal crosswise cut. If the carrots are large, slice them lengthwise as well. Place the carrots in the prepared baking dish and add brown sugar, maple syrup and salt. Toss to combine.
- Distribute the cubed butter pieces on top of the carrots and roast for 50 to 60 minutes, stirring every 15 to 20 minutes.
- Remove from the oven and top with sliced almonds and parsley, if desired. Serve warm.
