Meal Prep Noodle Soup Jars

No time to pack a lunch every day? With Meal Prep Noodle Soup Jars, you can do four days of packing all at once. Simply fill your jars with fresh veggies, tofu, noodles and seasonings, store them in the fridge, and pour in hot water when ready to serve.

Ingredients

  • 4 pint-sized, wide-mouth jars with lids
  • ¼ cup white miso paste
  • ¼ cup low-sodium soy sauce or tamari
  • 2 tablespoons sesame oil
  • 2 tablespoons fresh ginger, grated
  • 1 tablespoon hot sauce
  • 1 cup frozen mixed vegetables
  • 1 cup extra-firm tofu, drained and diced
  • 1 cup prepared rice noodles or soba noodles (cooked according to package directions)
  • ¼ cup green onions, chopped
  • ½ cup fresh basil leaves, torn into small pieces

Instructions

  1. In a small bowl, combine the miso paste, soy sauce or tamari, sesame oil, ginger, and hot sauce. Stir to create a paste.
  2. In each jar, layer the following ingredients in the order listed: 2 tablespoons miso paste mixture, ¼ cup frozen mixed vegetables, ¼ cup cubed tofu, ¼ cup cooked noodles, 1 tablespoon scallions and 2 tablespoons torn basil leaves.
  3. Seal jars with lids and store in the refrigerator for up to 5 days.
  4. When ready to serve, fill jar with hot water and allow to sit for 2 minutes. Reseal jar with lid and shake to combine ingredients. Pour soup into a bowl to serve or enjoy directly from the jar with a spoon.
