Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 stalks celery, thinly sliced
- 1 cup carrots, peeled and sliced
- 1 pound bulk hot Italian sausage, browned and drained
- 32 ounces chicken stock
- 2 cups water
- 1 large can (28 ounces) diced tomatoes, undrained
- 1 teaspoon fennel seeds
- 1 teaspoon salt
- 1 cup elbow pasta, uncooked
- 1 can (15 ounces) red kidney beans
- 1 can (15 ounces) cannellini beans
- Parmesan cheese, grated
- Fresh basil, chopped
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add onions and sauté until golden. Add garlic and sauté until just fragrant.
- Add celery, carrots, browned sausage, chicken stock, water, diced tomatoes fennel and salt, and stir until the liquid simmers.
- Add the pasta and beans. Simmer over medium heat, stirring occasionally, until pasta is cooked. To serve, ladle the soup into serving bowls and top each serving with fresh basil and lots of grated Parmesan cheese.
