Ingredients
- 2 ½ cups all-purpose flour
- ½ cup whole-wheat flour
- ½ cup (1 stick) cold butter, diced
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon sugar
- 1 ½ teaspoons salt
- 1 ½ teaspoons black pepper, divided
- 8 ounces sharp yellow cheddar cheese, cubed
- 4 strips bacon, cooked and crumbled
- 1 ½ cup Guinness
- 1 tablespoon apple cider vinegar
- 2 tablespoons heavy cream
- Flaky sea salt, for topping (optional)
Instructions
- Preheat oven to 400 degrees and grease 5 mini loaf pans with nonstick cooking spray. Set aside.
- In a large bowl, use a hand or stand mixer fitted with the paddle attachment to mix together both flours, butter, baking powder, baking soda, sugar, salt and 1 teaspoon pepper on low speed for 30 seconds. Stop mixer and add the cheddar, crumbled bacon, Guinness and vinegar. Mix on low speed just until mixture forms a shaggy dough, about 15 to 20 seconds.
- Turn dough out onto a lightly floured surface and use hands to gently incorporate any dry ingredients that didn’t get fully mixed. Divide dough into 5 equal portions and press each into the prepared loaf pans.
- Brush the top of each loaf with heavy cream and sprinkle with remaining ½ teaspoon pepper and flaky sea salt, if desired. Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the loaves comes out clean. Set aside to cool completely before serving or gifting.
