Mixed Berry Fruit Salad

Ingredients
Dressing:
- ⅓ cup fresh-squeezed orange juice
- ⅓ cup fresh-squeezed grapefruit juice
- ⅓ cup fresh-squeezed lemon juice
- ¼ cup honey
- 1 teaspoon orange zest
- ½ teaspoon lemon zest
- 1 teaspoon vanilla extract
Fruit Salad:
- 2 cups strawberries, hulled and sliced
- 12 ounces fresh blueberries
- 6 ounces fresh raspberries
- 6 ounces fresh blackberries
- 3 kiwis, peeled and sliced
- 1 cup seedless grapes, halved lengthwise
- 1 tablespoon chia seeds
Instructions
- In a small saucepan, combine all dressing ingredients except the vanilla extract and bring to a boil over medium heat. Once boiling, reduce heat to low and simmer until slightly thickened, about 5 minutes.
- Remove from heat and stir in the vanilla extract. Transfer dressing to a cup or bowl and chill in the refrigerator for at least 3 hours.
- Once dressing has chilled, combine all fruit salad ingredients in a large bowl. Pour dressing over the top and gently toss to combine. Serve immediately.
