Mixed Berry Fruit Salad

Add a pop of color to your breakfast or brunch spread with a Mixed Berry Fruit Salad. Made with four types of berries, kiwis, grapes, and a tangy citrus and honey dressing, this healthy recipe is a quick and easy crowd-pleaser.

Ingredients

Dressing:

  • ⅓ cup fresh-squeezed orange juice
  • ⅓ cup fresh-squeezed grapefruit juice
  • ⅓ cup fresh-squeezed lemon juice
  • ¼ cup honey
  • 1 teaspoon orange zest
  • ½ teaspoon lemon zest
  • 1 teaspoon vanilla extract

Fruit Salad:

  • 2 cups strawberries, hulled and sliced
  • 12 ounces fresh blueberries
  • 6 ounces fresh raspberries
  • 6 ounces fresh blackberries
  • 3 kiwis, peeled and sliced
  • 1 cup seedless grapes, halved lengthwise
  • 1 tablespoon chia seeds

Instructions

  1. In a small saucepan, combine all dressing ingredients except the vanilla extract and bring to a boil over medium heat. Once boiling, reduce heat to low and simmer until slightly thickened, about 5 minutes.
  2. Remove from heat and stir in the vanilla extract. Transfer dressing to a cup or bowl and chill in the refrigerator for at least 3 hours.
  3. Once dressing has chilled, combine all fruit salad ingredients in a large bowl. Pour dressing over the top and gently toss to combine. Serve immediately.
