Ingredients

  • 2 tablespoons avocado or olive oil
  • 2 eggs
  • ½ teaspoon salt
  • ½ cup Italian-style breadcrumbs
  • ½ cup Parmesan cheese, grated
  • 1 bunch asparagus (medium thickness*)

Garlic Mayonnaise:

  • ½ cup mayonnaise
  • 2 large cloves garlic, minced
  • ½ teaspoon favorite all-purpose seasoning (such as Tony Chachere’s or Mrs. Dash)

*Thin and delicate asparagus doesn’t hold up as well for this recipe.

Instructions

  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper and brush with oil.
  2. In a shallow bowl, whisk together the eggs and salt. In a separate shallow bowl, whisk together the breadcrumbs and Parmesan.
  3. Dip each asparagus spear into the egg mixture, then roll in the breadcrumb mixture to evenly coat. Place spears about 1 inch apart on the prepared baking sheet. Roast for about 15 minutes, or until spears are bright green with a golden crust.
  4. Meanwhile, in a small bowl, whisk together all garlic mayo ingredients to combine. Set aside.
  5. Serve asparagus “fries” warm alongside garlic mayo for dipping.
