Oven-Baked Parmesan Asparagus “Fries”
Crunchy Oven-Baked Parmesan Asparagus “Fries” offer a creative, spring-inspired spin on traditional fries. Coat tender asparagus spears in a crispy Parmesan and breadcrumb mixture, then bake until golden brown and serve alongside a quick and easy garlic mayo for dipping.

Ingredients
- 2 tablespoons avocado or olive oil
- 2 eggs
- ½ teaspoon salt
- ½ cup Italian-style breadcrumbs
- ½ cup Parmesan cheese, grated
- 1 bunch asparagus (medium thickness*)
Garlic Mayonnaise:
- ½ cup mayonnaise
- 2 large cloves garlic, minced
- ½ teaspoon favorite all-purpose seasoning (such as Tony Chachere’s or Mrs. Dash)
*Thin and delicate asparagus doesn’t hold up as well for this recipe.
Instructions
- Preheat oven to 450 degrees. Line a baking sheet with parchment paper and brush with oil.
- In a shallow bowl, whisk together the eggs and salt. In a separate shallow bowl, whisk together the breadcrumbs and Parmesan.
- Dip each asparagus spear into the egg mixture, then roll in the breadcrumb mixture to evenly coat. Place spears about 1 inch apart on the prepared baking sheet. Roast for about 15 minutes, or until spears are bright green with a golden crust.
- Meanwhile, in a small bowl, whisk together all garlic mayo ingredients to combine. Set aside.
- Serve asparagus “fries” warm alongside garlic mayo for dipping.
