Oven-Barbecued Pork Loin Chops
In the mood for barbecue? Skip the grill and fire up your oven instead. Bake these lean, bone-in pork loin chops in a cast-iron skillet and top with homemade barbecue sauce. Serve with baked potatoes and corn on the cob.

Ingredients
- 6 bone-in pork loin chops (¾-inch thick), about 6 ounces each
- ½ teaspoon kosher salt (optional)
- ¼ teaspoon black pepper (optional)
- ¾ cup ketchup
- ⅓ cup low-sodium chicken broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cider vinegar
- 2 teaspoons brown sugar
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- ¼ teaspoon onion powder
- Fresh rosemary, for garnish (optional)
Instructions
- Preheat oven to 375 degrees.
- Season pork chops with salt and pepper if using. Place chops in a large cast-iron skillet, overlapping slightly. Set aside.
- In a large measuring cup, combine the ketchup, chicken broth, Worcestershire sauce, cider vinegar, brown sugar, black pepper, chili powder and onion powder. Stir until thoroughly combined.
- Pour barbecue sauce mixture over the chops. Bake uncovered for 40 minutes, turning chops halfway through cooking.
- Garnish with fresh rosemary, if desired, and serve immediately.
