Oven-Barbecued Pork Loin Chops

In the mood for barbecue? Skip the grill and fire up your oven instead. Bake these lean, bone-in pork loin chops in a cast-iron skillet and top with homemade barbecue sauce. Serve with baked potatoes and corn on the cob.

Ingredients

  • 6 bone-in pork loin chops (¾-inch thick), about 6 ounces each
  • ½ teaspoon kosher salt (optional)
  • ¼ teaspoon black pepper (optional)
  • ¾ cup ketchup
  • ⅓ cup low-sodium chicken broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cider vinegar
  • 2 teaspoons brown sugar
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • ¼ teaspoon onion powder
  • Fresh rosemary, for garnish (optional)

Instructions

  1. Preheat oven to 375 degrees.
  2. Season pork chops with salt and pepper if using. Place chops in a large cast-iron skillet, overlapping slightly. Set aside.
  3. In a large measuring cup, combine the ketchup, chicken broth, Worcestershire sauce, cider vinegar, brown sugar, black pepper, chili powder and onion powder. Stir until thoroughly combined.
  4. Pour barbecue sauce mixture over the chops. Bake uncovered for 40 minutes, turning chops halfway through cooking.
  5. Garnish with fresh rosemary, if desired, and serve immediately.

In a hurry? Skip step 3 and substitute 2 cups of your favorite ready-to-eat barbecue sauce.
