Peach and Ricotta Puff Pastry Strudels

Craving something sweet? Whip up a batch of Peach and Ricotta Puff Pastry Strudels made with sweetened ricotta cheese and peach slices layered over flaky, golden pastry. With a little help from store-bought puff pastry, these irresistible strudels make an easy yet elegant treat for breakfast, brunch or dessert.

Ingredients

  • 17.3 ounces (1 package) puff pastry, thawed 
  • 1 cup whole-milk ricotta
  • 1 cup powdered sugar, divided
  • 1 lemon, zested and juiced
  • 1 pinch salt
  • 3 peaches, pitted and sliced 
  • 1 egg
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat oven to 400 degrees with the rack in the middle. Line a baking sheet with parchment paper and set aside.
  2. Unfold puff pastry sheets and cut both into 6 equal rectangles. Place rectangles on prepared baking sheet and use a paring knife to lightly score a smaller rectangle in the middle of each, creating a border about 1 inch thick around the edges. Set aside.
  3. In a medium bowl, stir together the ricotta, 2 tablespoons powdered sugar,  lemon zest and salt until completely combined. Spread about 1 tablespoon of the ricotta mixture over the middle of each puff pastry sheet (inside the scored rectangle), then top with 3 to 4 peach slices.
  4. In a small bowl, whisk the egg with 1 tablespoon water. Brush egg wash onto the edges of each strudel and sprinkle each with granulated sugar. Bake for about 15 minutes, rotating the pan after about 10 minutes, until the pastry edges are golden-brown. Set aside to cool.
  5. Meanwhile, in a small bowl, combine the lemon juice with the remaining powdered sugar ( ¾ cup plus 2 tablespoons). Whisk until smooth. Drizzle over each cooled strudel and serve immediately.
