Peanut Butter and Jelly Bars

These easy, kid-friendly Peanut Butter and Jelly Bars can be made with your favorite flavor of jam or jelly. They’re perfect for adding to school lunches for the kids, enjoying as an afternoon snack or even serving as a dessert.

Ingredients

  • 1⁄2 cup butter
  • 1⁄2 cup brown sugar
  • 1 egg
  • 1⁄2 cup peanut butter
  • 1⁄2 cup self-rising flour
  • 2/3 cup whole-wheat flour
  • 1 cup favorite jam or jelly
  • 1 cup peanuts, chopped

Instructions

  1. Heat oven to 350 degrees. Combine butter, brown sugar, egg and peanut butter until creamy. Mix in flours until well combined.
  2. Divide mixture in half. Press one half evenly into an 8-by-8-inch greased and floured baking dish. Bake for 10 minutes.
  3. Remove from oven and carefully spread jam evenly over the entire surface. Gently disperse remaining batter in small pieces over the top, then sprinkle peanuts and press gently to cover top. Bake for an additional 20 minutes. Allow to cool before serving.
