Peanut Butter Fudgesicles

Ingredients
- ½ cup dark cocoa powder
- ½ cup sugar
- 2 teaspoons cornstarch
- ¼ teaspoon kosher salt
- ¼ cup creamy peanut butter
- 2 tablespoons semisweet chocolate, chopped
- 2 cups half-and-half
Instructions
- In a saucepan, whisk together cocoa powder, sugar, cornstarch and salt. Add peanut butter, chocolate, and half-and-half. Cook over medium-high heat, whisking constantly, for 10 minutes or until mixture is thick.
- Transfer chocolate mixture into a large liquid measuring cup. Pour into ice pop molds and let cool at room temperature for 15 to 20 minutes. Add ice pop sticks and freeze for at least 3 to 4 hours.
- Once fudgesicles are completely frozen, run popsicle molds under lukewarm water until the fudgesicles release. Serve immediately or wrap individually in parchment paper and store in the freezer until ready to serve.
