Ingredients
- 1 pound chicken breast cutlets
- 2 teaspoons salt, divided
- 1 cup pecans
- 1 cup panko breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon dry mustard
- ½ teaspoon black pepper
- 2 tablespoons milk
- 2 eggs
- Avocado oil cooking spray (or other neutral-flavored oil)
Instructions
- Preheat oven to 425 degrees. Place a wire cooling rack on top of a baking sheet and set aside.
- Sprinkle 1 teaspoon of salt on the chicken cutlets. Set aside.
- In a food processor or blender, pulse pecans into small pieces. Transfer to a medium bowl and mix with remaining salt, breadcrumbs, paprika, garlic powder, dry mustard and black pepper. Transfer mixture to a shallow dish or plate.
- In a separate shallow dish, whisk the milk and eggs together.
- Dredge chicken cutlets in egg mixture, then in pecan mixture. Repeat once more to get a thick coating. Place breaded cutlets on top of the wire rack.
- Spray both sides of the cutlets liberally with cooking oil. Bake for 12 to 15 minutes, or until the internal temperature reaches 165 degrees.
