Pecan-Crusted Chicken

Ingredients

  • 1 pound chicken breast cutlets
  • 2 teaspoons salt, divided
  • 1 cup pecans
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dry mustard
  • ½ teaspoon black pepper
  • 2 tablespoons milk
  • 2 eggs
  • Avocado oil cooking spray (or other neutral-flavored oil)

Instructions

  1. Preheat oven to 425 degrees. Place a wire cooling rack on top of a baking sheet and set aside. 
  2. Sprinkle 1 teaspoon of salt on the chicken cutlets. Set aside. 
  3. In a food processor or blender, pulse pecans into small pieces. Transfer to a medium bowl and mix with remaining salt, breadcrumbs, paprika, garlic powder, dry mustard and black pepper. Transfer mixture to a shallow dish or plate. 
  4. In a separate shallow dish, whisk the milk and eggs together.
  5. Dredge chicken cutlets in egg mixture, then in pecan mixture. Repeat once more to get a thick coating. Place breaded cutlets on top of the wire rack.
  6. Spray both sides of the cutlets liberally with cooking oil. Bake for 12 to 15 minutes, or until the internal temperature reaches 165 degrees.

Cooking time may vary depending on the thickness of the chicken cutlets.
