Pecan Praline French Toast Casserole

Enjoy a decadent Southern twist on French toast with a make-ahead Pecan Praline French Toast Casserole. Spread the praline topping over the bottom of a baking dish, then add a layer of thick French bread slices and the egg and milk mixture. Refrigerate the casserole overnight, then the only thing left to do in the morning is bake and enjoy.

Ingredients

  • Nonstick vegetable spray
  • 1 cup dark brown sugar, firmly packed
  • ⅓ cup unsalted butter, melted
  • 2 tablespoons maple syrup
  • ¾ cup pecans, finely chopped 
  • 4 large eggs, lightly beaten
  • 1 cup 2% reduced-fat milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 10 ounces whole-grain French bread, cut into 1-inch slices

Instructions

  1. Coat a 9-by-13-inch baking dish with nonstick vegetable spray. Set aside.
  2. In a medium bowl, stir together the brown sugar, melted butter and maple syrup. Pour mixture into the prepared baking dish and spread evenly over the bottom. Sprinkle chopped pecans over the top.
  3. In the same medium bowl, whisk together the eggs, milk, granulated sugar, cinnamon and vanilla extract. Set aside.
  4. Arrange the bread slices over the pecans in the baking dish, then pour the egg mixture over the bread. Cover and chill in the refrigerator for 8 hours or overnight.
  5. In the morning, preheat oven to 350 degrees. Bake casserole uncovered for 30 minutes, or until golden brown. 
  6. Flip French toast slices out onto serving plates so the pecan layer is on top. Serve immediately.

Tips & Notes

Can’t find whole-wheat French bread? White French bread works, too.
