Peppermint Rice Crispy Treats

Peppermint Rice Crispy Treats are a fun, holiday-inspired twist on a classic. Filled with sweet marshmallows and crushed peppermint candies, this six-ingredient dessert couldn’t be easier to make. Drizzle melted white chocolate over the top for a festive finishing touch.

Ingredients

  • 12 tablespoons unsalted butter 
  • 8 ounces white chocolate 
  • ½ cup crushed peppermint candies
  • 20 ounces (2 bags) mini marshmallows 
  • 2 teaspoons peppermint extract
  • 10 cups crispy rice cereal

Instructions

  1. Grease a 9-by-13 pan-inch pan and set aside. 
  2. In a large pot over medium-low heat, combine the butter and white chocolate and stir until melted. Add crushed candies and mini marshmallows and continue stirring until marshmallows are melted. 
  3. Remove from heat and stir in the peppermint extract. Add the cereal and stir until completely combined. The mixture will be sticky.
  4. Pour into the prepared pan, using a piece of parchment paper to press the treats down evenly. Allow to cool to room temperature before slicing and serving.

Tips & Notes

You can drizzle melted white chocolate over the cooled rice crispy treats for a festive look and even more white chocolate flavor.
