Peppermint Rice Crispy Treats are a fun, holiday-inspired twist on a classic. Filled with sweet marshmallows and crushed peppermint candies, this six-ingredient dessert couldn’t be easier to make. Drizzle melted white chocolate over the top for a festive finishing touch.

Ingredients
- 12 tablespoons unsalted butter
- 8 ounces white chocolate
- ½ cup crushed peppermint candies
- 20 ounces (2 bags) mini marshmallows
- 2 teaspoons peppermint extract
- 10 cups crispy rice cereal
Instructions
- Grease a 9-by-13 pan-inch pan and set aside.
- In a large pot over medium-low heat, combine the butter and white chocolate and stir until melted. Add crushed candies and mini marshmallows and continue stirring until marshmallows are melted.
- Remove from heat and stir in the peppermint extract. Add the cereal and stir until completely combined. The mixture will be sticky.
- Pour into the prepared pan, using a piece of parchment paper to press the treats down evenly. Allow to cool to room temperature before slicing and serving.
Tips & Notes
You can drizzle melted white chocolate over the cooled rice crispy treats for a festive look and even more white chocolate flavor.
