Phyllo Baked Brie with Strawberries and Honey

Ingredients
- 4 ounces fresh strawberries, sliced
- 1 tablespoon sugar
- Pinch of salt
- 8 sheets phyllo, room temperature
- ¼ cup butter, melted
- 8 ounces (1 wheel) double-cream brie, cold and firm
For Serving:
- Crackers or crostini
- Fresh strawberries, sliced
- Honey
- Flaky salt
Instructions
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
- In a small saucepan, combine the strawberries, sugar and salt. Cook over medium-high heat until the juices are reduced to the consistency of jam, about 5 minutes. Let cool to room temperature.
- Place 1 sheet of phyllo on the prepared baking sheet. Brush melted butter on the center of the phyllo in a circle about the same size as the brie. Place another sheet of phyllo on top of the first in the opposite direction. Brush with butter again. Repeat twice more until you have layered and buttered a total of 4 sheets.
- Place the brie in the center of the phyllo and top with strawberry mixture.
- Top the brie with 4 more sheets of phyllo, brushing the center with butter between each layer and rotating each sheet as in step 3.
- Brush the edges of phyllo with butter to seal the top to the bottom. Roll each side toward the brie, tucking excess phyllo underneath to make a package.
- Brush the top and edges of the phyllo with butter and bake for 40 to 45 minutes, or until golden brown. Remove from oven and let cool.
- Serve brie on crackers or crostini with sliced strawberries, honey and flaky salt.
