Quick Blueberry Pickles

Ingredients

  • 3 cloves garlic, mashed
  • ½ cup cider vinegar
  • ½ cup sugar
  • 1 cup water
  • one bunch fresh mint, rinsed
  • ½ red onion, sliced very thin
  • 1 cup blueberries
  • 1 medium cucumber, peeled and sliced very thin
  • 1 teaspoon coarse salt
  • ½ teaspoon red pepper flakes

Instructions

  1. In a medium saucepan, combine garlic, vinegar, sugar and water. Stir over medium heat until sugar dissolves. Stir in red pepper and salt. Cool to lukewarm.
  2. Place onion, cucumber, berries and mint in an airtight container, and cover with the vinegar mixture. Seal and refrigerate 4 to 6 hours.
  3. Remove mint and garlic. Serve over grilled chicken or pork chops.

Tips & Notes

These are also tasty when paired with yogurt and served with Greek or Indian food.
