Raspberry, Mint and Lime Soda

Hot summer days call for a tall glass of ice-cold Raspberry, Mint and Lime Soda. Prepare a whole pitcher in just 10 minutes for poolside sipping all day.

Ingredients

  • 2 cups raspberries
  • ¼ cup plus 2 tablespoons lime juice
  • ⅔ ounce mint leaves
  • 1 ½ cups sugar
  • ¼ teaspoon salt
  • 2 liters sparkling water
  • Extra mint leaves, for garnish (optional)

Instructions

  1. In a blender, combine the raspberries, lime juice and mint. Blend until smooth.
  2. Pour mixture into a medium pot. Add the sugar and salt and bring to a boil, stirring occasionally. Once mixture reaches a boil, turn off the heat and strain syrup through a fine mesh sieve into a bowl or other heat-proof container. Set aside to cool.
  3. Once cool, pour syrup mixture into the bottom of a large pitcher. Add sparkling water and stir to combine.
  4. Serve soda over ice. Garnish with a mint leaf, if desired.
