Raspberry, Mint and Lime Soda
Hot summer days call for a tall glass of ice-cold Raspberry, Mint and Lime Soda. Prepare a whole pitcher in just 10 minutes for poolside sipping all day.

Ingredients
- 2 cups raspberries
- ¼ cup plus 2 tablespoons lime juice
- ⅔ ounce mint leaves
- 1 ½ cups sugar
- ¼ teaspoon salt
- 2 liters sparkling water
- Extra mint leaves, for garnish (optional)
Instructions
- In a blender, combine the raspberries, lime juice and mint. Blend until smooth.
- Pour mixture into a medium pot. Add the sugar and salt and bring to a boil, stirring occasionally. Once mixture reaches a boil, turn off the heat and strain syrup through a fine mesh sieve into a bowl or other heat-proof container. Set aside to cool.
- Once cool, pour syrup mixture into the bottom of a large pitcher. Add sparkling water and stir to combine.
- Serve soda over ice. Garnish with a mint leaf, if desired.
