Ingredients
Red Velvet Cake
- ½ cup cocoa powder
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- ½ cup (1 stick) butter, softened
- ¾ cup sugar
- ½ cup brown sugar
- 2 eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 tablespoon red food dye
Cream Cheese Frosting
- 8 ounces (1 package) cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 ½ cups powdered sugar
Instructions
- Heat oven to 350 degrees and line a baking sheet with parchment paper.
- Whisk together the cocoa powder, flour, baking soda, baking powder and sea salt. Set aside.
- With a hand or stand mixer, beat together the butter and sugars in a large bowl until fluffy, about 2 to 3 minutes.
- Add eggs and vanilla and mix until combined. Alternate adding half the dry ingredients and then half the buttermilk. Then, add the red food dye and mix until just combined. Do not overmix.
- Scoop or pipe about 2 to 3 teaspoons of batter onto the baking sheet, approximately 2 inches in diameter, spaced 3 to 4 inches apart. Bake for 8 to 10 minutes, then move to a cooling rack.
- To make the cream cheese frosting, add all of the ingredients to a large bowl and beat with a hand or stand mixer until everything is combined.
- To assemble the whoopie pies, fill a piping bag with the cream cheese frosting and pipe one side of the cooled cookie with filling, then top with another cookie. Repeat with remaining cookies.
- Serve immediately or store in the refrigerator in an airtight container.
