Seasonal Veggie Fried Rice with Shrimp

Ingredients

  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 4 tablespoons olive oil, divided
  • 4 cups mixed vegetables (carrots, bell peppers, broccoli and snap peas), diced
  • 2-3 cloves garlic, minced
  • 2 eggs, beaten
  • 4 cups white rice, cooked and cooled
  • 12 ounces raw shrimp, peeled and deveined
  • 1 bunch green onions, diced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, ¼ teaspoon salt and ½ teaspoon black pepper. Set aside.
  2. In a large pan, heat 3 tablespoons oil over medium-high heat. Add mixed vegetables and cook for 5 minutes, stirring occasionally. Add the garlic and continue cooking while stirring for 5 more minutes.
  3. Lower heat to medium and make a well in the center of the vegetables. Add eggs to the well and cook for 2 to 3 minutes while stirring to scramble. 
  4. Add the cooked rice to the vegetable mixture a little at a time, stirring to incorporate.
  5. Add the soy sauce mixture and continue to cook while stirring until the rice is slightly crispy, about 5 minutes. Turn off heat and set aside to cool.
  6. In a separate pan, heat the remaining 1 tablespoon oil, ¾ teaspoon salt and ½ teaspoon black pepper over medium-high heat. Add shrimp and cook for 2 to 2
  7.  ½ minutes per side. 
  8. Divide rice mixture between serving bowls and top each serving with shrimp, diced green onions and toasted sesame seeds. Serve immediately.
