Ingredients
- ¼ cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon salt, divided
- 1 teaspoon black pepper, divided
- 4 tablespoons olive oil, divided
- 4 cups mixed vegetables (carrots, bell peppers, broccoli and snap peas), diced
- 2-3 cloves garlic, minced
- 2 eggs, beaten
- 4 cups white rice, cooked and cooled
- 12 ounces raw shrimp, peeled and deveined
- 1 bunch green onions, diced
- 1 tablespoon toasted sesame seeds
Instructions
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, ¼ teaspoon salt and ½ teaspoon black pepper. Set aside.

- ½ minutes per side.
- Divide rice mixture between serving bowls and top each serving with shrimp, diced green onions and toasted sesame seeds. Serve immediately.
