Rainbow Carrots and Leeks

These simple roasted carrots taste and look delicious.

Ingredients

  • 2 pounds rainbow carrots, peeled, trimmed and cut on the diagonal
  • 2 whole leeks, washed, trimmed and sliced in disks
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon sea salt

Instructions

  1. Heat oven to 400 degrees.
  2. Toss all ingredients in a shallow roasting pan until carrots are well coated.
  3. Roast for 25 to 35 minutes, stirring several times, until carrots are soft and slightly caramelized.
