Sheet Pan Roasted Sausage and Vegetables
Prepping Sheet Pan Roasted Sausage and Vegetables is as easy as chopping veggies and sausage and whipping up a quick dressing ahead of time to store in the fridge. On the day of the meal, all you have to do is roast the veggie mixture and serve it over rice for a complete and family-friendly dinner.

Ingredients
For the dressing:
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon Parmesan cheese, grated
- 1 teaspoon Dijon mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon dried oregano
- ¼ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For the sausage and vegetables:
- ½ cup brown rice, uncooked
- 12 ounces precooked turkey sausage or kielbasa, sliced into rounds
- 1 broccoli crown, cut into florets
- 1 medium or large zucchini, cut into bite-sized pieces (about 1 inch)
- 1 bell pepper (any color), cut into bite-sized pieces (about 1 inch)
- 2 tablespoons extra-virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a jar or container with a lid, combine all dressing ingredients. Seal with lid and shake to combine. Store in the refrigerator until ready to use.
- Cook rice according to package directions.
- While rice cooks, spread out the sausage, broccoli, zucchini and bell pepper in a single layer on the prepared baking sheet. Drizzle with oil and sprinkle with salt and pepper. Toss to coat sausage and vegetables evenly in the oil. Roast for 25 to 30 minutes, or until vegetables are crisp-tender.
- Divide cooked rice between serving bowls and top each serving with the sausage and vegetable mixture. Drizzle with desired amount of dressing and serve warm.
Tips & Notes
Meal Prep Tip: Chop the vegetables and sausage and prepare the dressing ahead of time and store in the fridge until ready to prepare the recipe. You can also make the entire recipe ahead of time and reheat to serve.
