Sheet Pan Salmon Dinner with Mint Dressing

Ingredients
- 12-16 ounces salmon (2 filets, halved)
- ½ pound small red or gold potatoes, halved
- ¼ cup olive oil
- ½ cup fresh mint, chopped
- 1 teaspoon kosher salt
- 1 cup fresh peas
Instructions
- Preheat oven to 375 degrees and lightly oil a baking sheet. Place salmon and potatoes on the prepared baking sheet and bake for 15 minutes.
- Meanwhile, prepare the dressing. In a small bowl, combine the olive oil, mint and salt.
- When the salmon and potatoes are done baking, remove from oven and add fresh peas to the hot pan. Drizzle the dressing over the fish and veggies to coat well. Serve warm.
